96 spider takes a while to warm to 190 then goes to say 140 or so while driving and creeps over 200 when in traffic or just at idle, will go back down after fans kick on. Ambient temp was 45 so not a hot day. Im guessing thermostat stuck open?

This will happen even with an operating thermostat.

so is taking the thermo out and testing it a waste then? it seemed cold to me. it was at like 9 o'clock on the gauge while driving. i could smell a little coolant burning and the heat was barely warm even after driving for 25 min or so

when I bought my 95 spider it wouldn't warm up. I had the thermostat replaced and it does pretty much what you've stated. In traffic or at a light it will creep up to 190-200. As soon as I start driving the temp goes back to around 160, which is when it is supposed to open I believe. My 308 did this also.
so your car's behavior is pretty normal I would say.

I would suspect the thermostat. Even on a cold winter day, I can drive on the freeway and not see my water temp drop below 170 or there about. I did have a problem where it was lower, and the thermostat was bad...replaced and all was good again.
