a day in hk

Any suggestions of what to do with an 8 hour layover in hk, from early morning until 5 pm?

I was thinking breakfast at the pen, just to have a good starting point.

I know I want to go to the peak and ride a junk. What else is fun and touristish?

I don't know how much else you can fit it.. if you take the peak tram, that can suck up a couple of hours if it's busy. (Waiting/tram ride/spending time at the Peak/coming back down by tram or road).
The 'Peak' is more of a shopping centre/lookout, if you are up for it you can walk up the road to see more of the natural beauty of island and see more westward.

Star Ferry across the harbour.

Over near the airport there is the cable car/big Buddha.

Ladies Market is a typical thing to experience, but only if you are interested in 'copy watch' or want to see the market.
