    I am hosting a dinner party and the theme is bacon. As in every course must have bacon as an ingredient.

    We've got spinach salad with bacon and bacon ice cream.

    I need help finding a main course using bacon. The only restrictions are it cannot contain beef and it must go with red wine.

    One guest has a beef allergy and we try to be accomodating.

    How much time do you have, and do you have a smoker? You can cure and smoke your own bacon, cut it into 1/4-1/2 inch thick slices and then grilled or pan fry with a BBQ sauce or whatever. A high end place by me does this as an app with small portions and it's incredible.

    Party is in a week and a half and I have a smoker

    He's good with pork and so am I. Those fatty's looks scrumpdillyumptious.

    You do have time to make your own bacon if you can find a pork belly around you without having to order it.

    On a different note, how prominent does bacon have to be in the dish? Another idea that you could do is pasta carbonara. At least to me, when done right, pasta carbonara is incredible and bacon is definitely key.

    I have 3 pounds of bacon from a smokehouse in Bishop Ca. I think I'll hold off on the home bacon curing this time around.

    Pasta Carbonara is a good suggestion. Just need a good red wine to go with it.

    The bacon explosion looks amazing. I will definitely try one. Not sure how the, how do I put this, more fastidious participants in this party would handle the explosion.

    My brother bbq'd a fatty at one of our tailgate parties this past season. It was phenomenal.

    We do bacon wrapped asparagus and shrimp on the grill fairly often. Take 3 or 4 asparagus stalks, smear some cream cheese in between them, and wrap the center 1/3 or so of the bunch in bacon. For shrimp, partially butterfly them, dice jalapenos and mix with cream cheese, smear this mixture in the middle of shrimp, and (you guessed it!) wrap in bacon.

    I have a long held personal law that if you wrap enough bacon around anything, it becomes delicious. You could wrap a dog turd in bacon and it would probably taste good.

    Damn....a Bacon Party.....how did I not think of this first!?!

    Do a braised pork belly with garlic, onions and port wine.

    take a whole pork belly, trim off the excessive fat, make slits where you can insert garlic cloves & Garlic slivers... stud the belly with garlic,

    Sear the belly in very hot cast iron pan, till brown on all sides.

    add in onions cut into qtrs and two whole cloves of garlic cut in half. pour in half red wine and half chicken stock until the belly is covered just to the top. put in oven for 2 hrs at 300F. - and cover. let it cool in the juice. the next day take out the belly, strain the juice and reduce to a glaze. add in 3-4 oz of port when reduced and season to taste. puree the garlic and onions into the sauce.

    cut the belly to portion size, and sear to re heat & serve whith some puree potatoes and sauce.

    quite yummy!

    It will be home made ice cream with brown sugar glazed bacon.

    This is a communal type dinner, each couple brings a dish. My buddy is bringing the dessert so I don't know the details of his recipe.

    Party was last night. Did not take any pictures but the food was delicious.

    We had.

    Blue Cheese dip with bacon on toated baguettes.
    Loaded Mashed potatoes
    Grilled Pork tenderloin wrapped in bacon with a Bourbon/maple syrup BBQ sauce.
    Desert was Candied bacon in vanilla Ice cream and Port wine soaked strawberries with chocolate sauce.

    Thankyou all for the suggestions.
