    I have been making these a lot lately and they are really good.

    Ingredients:

    •Sourdough bread
    •chicken breast
    •pesto sauce/spread
    •good quality mozzarella
    •Mayo if you like
    •Red bell pepper (Got mine at the local farmers' market, best I've ever had)
    •Mustard
    •Tomato
    •Salt and pepper if you like
    •Cheese. I have been using a local Sage cheese. Unbelievable


    I buy a solid loaf of sourdough and cut to desired thickness. I always have the meat on the bottom and everything else on top. No lettuce needed on this one. From bottom to top I do the meat, cheese, tomato, pesto, stick the mozzarella on top of that, then a big fat slice of bell pepper

    This thing will be tall and busting out of the seams. I wrap it tightly in foil, then put on the smoker or grill on each side until the foil is golden brown. This toasts the bread and melts the cheese just enough.

    Tasty! Mozzarella + pesto + tomato + good sourdough. With a start like that, your sammie can't go wrong.

    Where do you get sage cheese from? Is that a derby sage cheese?
