    Olive wagyu? Watched a YouTube video on that recently. Did the olive fed taste different from other high grade wagyu that you've tried?

    I finally found the Japanese A5 Wagyu at the Costco near us. I decided to try it and have a few thoughts. I have had this type of beef only a few times - so not a lot of experience. My prior experience is with Snake River Farms and Holy Grail. Holy Grail was the best experience in terms of taste, texture, etc. but it had to do with the cut of beef.

    1. At Costco the beef is about $100 per pound.
    2. It is imported from Japan.
    3. Besides the A5 grade, I believe that the cut of beef has an impact on the final result. Costco only had "New York Steak". No other choices.
    4. I used a cast iron skillet and cooked one of the two pieces. I cut the one piece in two and when finished cooking, sliced it into smaller pieces.
    5. I used a bit of butter - really not needed - some rosemary and garlic. The actual cook time is relatively quick.

    Bottom line - I am happy that I tried the Costco product, but can't say that I would purchase it again. You certainly get a lot, the meat is authentic A5, but the cut is not for me. I would prefer a different cut of beef. For sure, if Costco carries a different cut, I would buy from Costco - just not the New York steak cut.

    Sweet! We're in our way to Costco right now!!

    Was it too rich? Not enough umami? Something else?

    We tried akaushi rib eye a few years back and it was too rich. Of course, we overdid it and had a big honking piece! We enjoyed the chuck eye and the hangar steak more...T

    I find this type of meat rich - can only eat a modest amount. It is definitely something different and worth trying on occasion.

    My only issue is that the NY Steak cut is not as tender / melting in your mouth as other cuts like a filet.

    I've had wagyu beef professionally prepared in a restaurant in Kobe, Japan.

    I can't reproduce the results as much as I try. I end up with extremely fatty steaks. They weren't like that in Kobe.

    I've never tried wagyu filet, but since it's naturally leaner than rib eye and strip steak, today might be a good route to go. Also, could be easier to in a smaller size...T

    How were they prepared? Grilled over fire, tepenyaki,...?

    We had A5 at Gordon Ramsey's steak place in Vegas and it was great. Not overly cooked, unctious but not over fatty, simply prepared (just some salt from what I could tell...T

    This was 15 years ago. We had never heard of Wagyu in the US.

    Why would ask how the steak was prepared? I trusted them. I will next time, though.

    Not a fan of NY Strip OR pan frying these works of culinary art....Ribeye and a grill make the magic.
