I am looking for a quick and easy recipe for Al Pastor. I see so many ways of marinating and cooking and there are dry Pastor seasonings/marinates available. Lets just call it a bachelors Al Pastor and the meat is the main thing. What cut is normally used, a shoulder? I realize the cut should be cubed and then marinated preferably overnight and then pan fried.

I could eat this stuff everyday as it is so simple and tasty.

    Just whipped up a batch.

In a blender combine 1 can chipotle peppers in adobo, the juice of one small can pineapple slices in juice, 4 cloves of garlic, half an onion.

Cube up 1.5 lbs pork shoulder or pork loin steaks. Marinate these in the chili mixture over night.

Pan fry the pork, dice up pineapple slices and pan sautée in butter until carmelized. Serve with fresh cilantro and onion.
