Split Pea Soup I never knew how good SPS could be until this recipe. (Not andouille but spiral ham) I buy (store brand) spiral sliced hams at Easter (and our Thanksgiving) because they are usually $1- 1.50US per pound (only the week before Easter and TG). Stupid cheap. I have no idea how they can sell for that cheap. I pull off all the nicely sliced ham parts and bag up for sandwich making. I then take the remainder and trim off all the lean ham I can easily do and chop it up. The bone with the rest of the ham will cook off in the soup. ………. Split Pea Soup #30 Dutch oven needed 1 pound split peas, soaked overnight 1-1.5 pounds ham, diced Ham bone 6 medium potatoes peeled and diced 1 large onion diced 3 Qt chicken stock Olive oil/red pepper 4 cloves garlic crushed 3 bay leaves 1 teaspoon grain of paradise* 1/2 teaspoon black pepper Some Chalula hot sauce …………………………. Char Ham in olive oil with a little garlic Remove ham Add more olive oil and red pepper, onions and then in a bit, the garlic. Once onions are clear add peas, potatoes, chicken stock, hambone, black pepper and Grains of Paradise Once cooked for 1.5-2 hours, ladle out 1.5 qts, purée and return. Add bay leaves and charred ham. Cook/Simmer for a while. Taste and add hot sauce. No salt needed. *Grains of Paradise is the secret ingredient in a lot of my recipes. Image Unavailable, Please Login Image Unavailable, Please Login
That works for me, before it became a popular soup in the 80s/90s it was a classic working-class meal with bread and jam.
We use pretty much the same recipe except we put in three or four cans of brown beans instead of peas. Really good.
