    Have you seen the first one, Delicatessen? I'm sure someone got spanked with a ham in it, but then I had been drinking before I watched it. I didn't drive home though, so no need for retoactive lashings ;)

    You are insane. You don't cook a ham you buy one already cooked by a secret recipe. Try Bobs Valley Market in Helena Mt.
    These guys have provided Presidantial hams for over 20 years and they really know what they are doing. Ham can arrive in a day. Better get after it.

    Well.....picked up the ham saturday afternoon - 12.75 lbs. Get your butcher to score the skin for you. Pig skin is tough stuff. Spent Saturday making the glaze and the "Essence" from scratch.....do this if you are going to make this recipe. You can buy it in the store, but the pre-packaged stuff looked less...natural. Anyhow, I prepped the ham Saturday night and put the rub on it then too.....and used a heck of a lot more than the recipe called for and rubbed it into every little nook and cranny of the scoring. Went in the oven at 8:00am yesterday and came out at 1:30. Keep an eye on it during that first hour.....ours started to burn after 45 mins....foil tent took care of that. Start checking the temp at 4.5 hrs in.....you only need it to get to 150 deg. before taking it out.

    Fed 10 adults with PLENTY of leftovers for sandwiches all week and not including sending one guest home with about two lbs of meat.

    This is a top notch recipe and I HIGHLY recommend it.

    Reduce the coke to syrup, you will need 2-4 liters if it. Add the red Chiles toward the end of the reduction, use fresh ones if you want extra heat. You might have to add a bit of apple vinegar but taste it first. brush it on as the ham is roasting.
