In my ongoing to quest to not get fat(ter) or die prematurely, I stumbled across a recipe or twelve for baked kale chips. Yes, kale, the leafy green stuff. I decided to give the one below a shot tonight and they are DAMN GOOD. They even have the crunch of a potato chip without the accompanying cardiac arrest.

I watched them closely and ended up turning the oven down to 350 and cooking them longer as a few started to brown quickly for some reason (my guess is uneven heating in the oven) which will make them bitter. I think next time I will start them at 350 and cook them for 20 minutes or so while keeping a close eye on them until I get the timing down. I also added a little garlic powder. I think the next batch will have chipotle powder on them. I can see these becoming a staple snack. Fast prep and easy to make a decent sized batch.

If you have the means, I highly recommend cooking some up. ;)

Sounds yummy. I'll give it a whirl.

I started making my own hummus recently. So much better than store bought. I'm teaching my daughter how to make it on Saturday.

I made these last night. Not bad. I think substituting collard greens for the kale would be better.
