    I have a BBQ competition coming up in a couple of weeks and I've been wracking what's left of my brain (70's were fun) about what to serve in the chef's choice category. The best I've come up with so far is smoked catfish soft taco's topped with a Chipotle Blue Cheese Slaw.

    The competition is in PA and I want to serve something they probably have never had. I'm going to do a practice run this weekend and will post results.

    I haven't cooked catfish too often, but I like it. Could there be any problems with it drying out or getting tough though? Don't really know, just thinking about it. Sounds like a good idea though. I love fish tacos if done well! Never thought about smoked catfish.
