For the record and for those who know, in BOCUZE who had a soup in honor deValerie Giscard D'Estaing, Ches yet his mother white chicken "half-mourning" whose skin was black and white truffles, the mother white for his chicken in cream ... etc., etc. ... But I have to go to the obvious, the best international cuisine is now in the "chefs". I go to Lyon next week when Bocuse has opened a brasserie at the Gare de l'Est, People, but friendly. Simple but good. And cuine Japanese and you know cooking, is not it?
But I know this is far.

It's a joke, the best chefs are acutellement Japan and the United States. Soon in China.

And the best experts are the United States, Japan and soon in China. The decline of the glory of each other, and after the Roman Empire.

When I was in Venice, our tour guide took us to a little restuarant, just barely big enough to hold the entire group (about 40 or so). They served us simple food, starting off with large chunks of fresh goat cheese with cherry tomatoes, then served Lasagna, and some sort of eclair type dessert. Not exactly what you would think of as Venetian food, but I think they probably knew that trying to serve authentic Italian food to 40 American teenagers would probably not go over well. It was easily the best food I have ever eaten, hands down. The restaurant was somewhere east of the Piazza San Marco. If anyone knows the name or whereabouts of this restaurant, please let me know...It's been almost 6 years since that day and my taste buds still aren't the same :)

    Sort of related:

After twenty-five years of trail blazing work, Charlie Trotter is closing his paradigm shifting restaurant in Chicago to pursue more academic interests.

    RUN!

I have been to NOMA in Copenhagen. Very, very good.

I would love to go to Blumenthals Fat Duck... Love his tv show "Hestons feasts". Cool to see what all the fuzz is about...

Sushi Village in Whistler is wonderful!

When in London, try Arbutus on Frith Street in Soho. Their lunch is great value!

I love SALT in the resort Tylosand on the Swedish west coast. A small restaurant built on the rocks at the water front, next to the best beach in Sweden. The food is so-so, but who cares when you sit in the evening sun and hear the waves roll in?

His Paris and Monaco restaurants are a bit different in the goals and philosophy compared with his other ones.

This thread needs a bump and I need to back-out of spontaneous purchase I can't use.

Next restaurant in Chicago (Grant Achatz) had gone to a pre-purchase ticketing system, and with the exception of a few tables periodically released on Facebook, the tickets for months into the future sell-out within a few hours of going on sale. I have two tickets for October 10th at 9:30PM with the premium wine option and will transfer them for what I paid.

PM me if you want them!

I have the great fortune of having a problem where I am double-booked for dinner at Guy Savoy and Alain Ducasse Au Plaza Athenee. For those that have been to both, do you recommend one over the other?

Also during the week I will be dining at Noma, Yam'Tcha, Pavilion Ledoyen, L'Atelier Saint-Germain de Joel Robuchon, Dinner by Heston Blumenthal, Fat Duck, and a week later Next in Chicago. If either of the above are especially different from the list that would help my decision as well.
