As part of looking for a car, I called Ferrari Cardiff this morning and a very helpful guy in service spend almost half an hour going over service costs intervals etc. Thought best to speak to a man who actually does it as advice/costs seem to vary widely on the forum. He said for a 360 average costs are:

Cambelt change (inc aux belts) £750 (every 3 years)
    Clutch: £3200 (ouch)
Ball joints: either £750 per corner for genuine Ferrari (which includes mount etc) or £400 per corner for "race prepared" ball joints on their own (to last for around 2000-3000 miles driving dependent of course)

So after worrying about getting a car which has just been cambelt serviced, it seems more important to find a car with a recent clutch change and/or ball joints changed.

Been considering an early as well but he said early pre Audi cars are very fragile ("lots going on") and 360 possibly more reliable overall.

Great idea to talk to these guys if you need advice as its not motivated by a sales pitch (service guys aren't salesmen) and probably not by personal ownership preferences.
