First I will introduce myself: I work a lot on Italian cars, especially Alfa & Lancia Integrales.

Now I'm working on a Ferrari 360 F1 of a client of mine, who has an Alfa too.

I'm changing the clutch of this Ferrari. I know when the clutch has been changed, this has to be resetted and the PIS needs to be installed again.

This I can do at the local Ferrari garage, that isn't the problem. But the 360 needs to ride to the garage. How can I get the car drivable to the Ferrari garage?

System must be drained? Especially the clutch slave cilinder.

Can anybody help me with this one please? Just drivable is enough.

There is no necessity to drain or disconnect any of the hydraulics when changing a clutch. Clutch slave, whole different kettle of fish.

... might be enough to destroy the new clutch, throwout bearing (which you should have replaced while in there,) flange (which you should have replaced while in there,) and TB seals (see previous.)

Have it trucked to a dealership that has the correct tools or you will be doing it all again for free.
