Do you anubody knows that can I replace the Cat temperature sensors to
normally used K-Type sensors (E.G in turbo engines), or must I use Ferrari
    orginal parts ?

If you change only the sensor, you should stick with stock parts.

But earlier cars have simple (and not very reliable) CAT temperature control modules (CCUs). If you also replace the CCU, you can change the sensor. The replacement CCU would have to be compatible with the car, though. On early CAT equipped cars, the CCU only controls the "slow down" light. Later cars with Lambda loops also have an input from the CCU to tell them when the exhaust is warmed up. EFI cars have the CCU integrated with the engine managment, so you'd have to replace the whole engine control system.

Updating the cat sensor is not a simple plug-n-play replacement.

It would help if we knew what model of car we were talking about.
