Cheese making, anyone?

    I like to dabble in all sorts of hobbies, like making wine and beer.

    I've never tried making cheese. Has anyone here had any experiences to share?

    I've never made it my self, but when living in Switzerland I was around a lot of Cheese factories... basically you get your fresh cream add rennet and bring up to temp - about 185f or so , scoop out all the curdled cheese curds, with Cheese cloth, and then squeeze the water out. put in your cheese form, and let it cure. at some point you can introduce other mold cultures for blue cheese, ash, herbs etc... choice of milk, cream is also going to dictate flacor and texture - sheep, goat, cow, etc...

    buffalo motzerella is really soft and just barely curdled - which i love, can be easy to make, but does take time. Good Luck!

    There are all kinds of books on the subject, as well as dedicated web sites.

    Also, unpasteurized milk can be gotten nowadays which will yield a better tasting cheese -- even if the variety in question needs to be aged past the unpasteurized-pasteurized threshold.

    Caution: seriously addictive stuff!

    I'm from and still live in New Wilmington and work in New Castle, small world. You may know where I'm talking about in the rest of this.

    Matt,

    My family was involved in the Cheese business for 50 years, my grandfather coming here from Switzerland to start a plant and then my uncles and father working in till it was sold the second time around 2000. While they may have done any small time cheese making, the theories are still the same and if you have any questions I can ask them and I'm sure they would be more than open in helping you out with any questions you may have. Unfortanetly I am too young to have ever worked in the business so I personally am of little help.

    Hey,

    Was Jack Marty your dad - or relative? He let me drive his Testarossa one time, back in 89. great guy. I'm asuming you are up in Amish country. I'm headed back home over the weekend of the 13th of June - my parents still live there... Whish they would move but they are cemented to NC... Hope all is well.

    He was ny grandfather. I knew the car well, used to get taken to preschool and elementary school in it. It made for a good way to turn a kid onto the dream of Ferrari ownership one day. I always thought the automatic seatbelts were the coolest thing.
