Go to a grocery store and try to find something called "Cracklin." You don't want to know what it is. However, when you mix bits of it into any cornbread mix, man oh man, dat's down home cooking. The Cracklin makes the cornbread moist and provides some chewing texture. Whut's time is dinner? Dale

Here ya go: Dubai Vols cornbread recipe 1.5 cups cornmeal ½ cup flour 2 tsp baking powder 1tsp salt ½ tsp baking soda 1.5 tsp sugar (I also substitute honey, and use more for sweet corn muffins) 1.5 cups milk 2 eggs ¼ cup butter Mix dry ingredients. Melt butter in skillet placed in 400 degree oven. Add milk, eggs, and butter to dry ingredients, mix quickly, pour batter into skillet, bake 25-30 mins. Enjoy.
