I think the issue with my overheating could have been the wrong thermostat. Didn't realize there were different ones for the same vehicle. Mine is a 2009 OTO. Ordered part#183759. Two show up in the eurospares part catalog - #226484 and #183758. Dealer is telling me it should have been the 226484 part. Taz et all, would love to know the differences in all of the above.
Eric- 183758 was introduced around 1998 on the 360 and was used on V8s and V12s up until at least early 612s. It was also used as a substitute for earlier Ferraris, like the 456 GT. 226484 was introduced later and I do not have any references for it other than it is a 612 only thermostat and costs about $500 compared to the $140 or so for the earlier thermostat. Unfortunately, I do not have an OTO parts catalog, but am guessing it was introduced with the Type F133H engine in 2007.
I am reading on redparts.fr that 226484 is valid as of Engine number 104651 Please note that the pump seem also different from this engine number
Eric- I do not have much information on what changes were made for the Type F133H engine in 2007 compared to the early Type F133F engines. It sounds like a new water pump/oil pump was one of the changes as noted by our Swiss friend, and that could easily generate a new thermostat for that engine only. I will look at the site he noted and see if there is anything else I can figure out. If in French, I am likely out of luck. Around 2007 is when Ferrari started transitioning from the SD3 type diagnostics that were CD/DVD based to a MODIS (online) based diagnostic system, so parts catalogs and WSMs have been harder to find. The late WSMs I have link to internet databases that only dealers can access. I looked at the redparts.fr site and they have a parts catalog for a 612 Sessanta, which was probably the first use of the Type F133H engine (7.3.2 Motronic) and served as the prototype for the OTO. Even though in French, I may be able to figure out some of the differences between the two engine types. We already know about the 599 clutch and transmission case, but not much else.

Eric- Sounds like the waterpump and that changed at AN 55825. That seems a little early for 7.3.2, which changed on the 599 at SN 156938. Have to see if I can crosscheck a serial number and assembly number. I already had the Eurospares site bookmarked, along with Ricambi and Maranello Classic Parts. Checked ANs and 55825 is around SN 138XXX, so definitely not tied to the Type F133H engine.
I'm resurrecting this thread as I am having little luck finding a thermostat for my 2007 612, which, per the information above, is part #226484. Ferrari North America and Scuderia no longer offer this part (How is that possible unless: "Covid"?). Any ideas? Anyone have any luck swapping another manufacturer part?

Eurospares have confirmed that Ferrari no longer makes this thermostat.....they are offering to try to find an alternative. Additionally, Ricambi told me that they have never stocked or sold this #226484 thermostat, and due to that fact, they believe that the previous thermostat must be the one that is being used across all years of the 612. I would welcome any other guidance on this... or if anybody knows what is the proper opening temperature for thermostats in the later 612s (2007+)?
Workshop manual shows the thermostat setting as 79 degC +/- 2degC. I assume this is for early cars, though there may be no difference for later cars. Superformance seem to have both in stock anyway.
