looking over the 360 and 355 ads this appears to be so. any comments?
Daytona spider vs coupe: yes
275 GTS vs GTB: no
330 GTS vs GTC: yes
In general yes. There are exceptions.

Gull wing MB's
(275GTB's aren't one of them. 275GTB4 NARTS are much more valuable than coupes)
Some of the most valuable F car's are coupes: 250GTO's.
In the earlier cars no doubt. Now with Ferrari building so many more cars its marginal. Today you can decide you want a used 360 spider in the most popular color combos. and have one tomorrow.

About $10-$15K differential in favor of GTS
classic and vintage excepted, they all depreciate at roughly the same rate. the spiders cost more a priori, so while they depreciate at the same rate, they're still pricier.
I think the biggest determinant down the line is rarity..and of course demand.
But of course...rarity drives demand.
