I'll be driving from Indiana to Manchester, NH (in a fun car!) on a route that runs along I90. The plan is to stay somewhere East of Syracuse, NY overnight that is interesting. Any suggestions?
Also, any roads that are "must drives" along this route?

When you get to ManchVegas, take a day trip and run up the Kangamangas Highway through the White Mountains in NH. Maybe take a drive up Mount Washington too if you have time.

Along lake Seneca at a (any) winery and Watkins Glen International is just west of Syracuse. Saratoga Springs is fun, but that's a bit further east. Be very mindful of your speed in NY around the road construction sites. And @19633500GT is most definitely correct in his NH pick!

If you are not in a specific hurry, I would recommend route 5 or route 20 from Cleveland , along Lake Erie. If you choose the southern route route 86 takes you from Erie over to Watkins Glen or you can find a road along one of the other Finger Lakes. One potential Stop east of Syracuse is Utica. Lots of lodging, not that much to do.
There is a particularly enjoyable piece of road (Route 13) going from route 20 Cazenovia north to Chittenango. Runs about 10 miles. Then you can hook up with route 5 east. or go a bit farther north to Oneida Lake and Sylvan Beach. (mostly closed up in Late fall/Winter).
    Enjoy.

Great drive around the lake, we've done it several times.

Ironically I've done the Kangamangas several times on my motorcycle but never with my Ferrari, hmmmm. And if you drive to the top of Mt. Washington, you can put a "This Car Climbed Mt. Washington" bumper sticker on your Ferrari! :D Speaking of the Kangamangas, reminds me of this song ......

I may be late in this posting but if you are in the Watkins Glen area take a detour to Hammondsport NY and visit the Glenn H. Curtis t Museum. Well worth seeing.

I'll be watching the weather very carefully. The last few years have brought mild to moderate temps the first week of Nov. We'll see how this goes.

According to what I can see of your map you're on large highways for most of the trip? I don't know your constraints give the locations you want to visit but you are going to miss a lot of NY state.
But you can't see everything in one trip ... enjoy. I hear Canada is back open. It was closed when I visited Buffalo and Niagara falls in late March.

Sweet! you made good time. Unfortunately, lots of rain ahead through Sunday. I hope you get a chance to dodge it. Or maybe wait another day :)

I’ve been fortunate enough to to have dodged the rain so far. Tomorrow looks very wet, unfortunately. We’ll take it slow and steady. It’s been an amazing trip so far. Looking forward to connect with another 599 owner on Day 7 of this trip….more to come on that. :)

Saratoga Springs is a wonderful spot, hope you were able to check out some of the beautiful buildings in the park near the museum.
If you end up taking route 9 from Bennington east there is a side road, route 8 that I'm sure you will enjoy lots of curves, it is in the town of Searsburg Vt it is about 13 miles east of Bennington.

The drive from Saratoga Springs to Albany Airport was uneventful. Took a side route down there (no highway). The trip from Albany to Manchester was awesome, but very wet. Rained (sometimes hard) most of the way along Route 7 / 279 / 9 all the way into downtown Manchester. The car handled incredibly well. Here are some pics from that leg of the journey.

Next leg will be the 7hr cruise to Baltimore. :)
