What would be the frequency and likelihood of passing easily for a 550 Maranello?

When I left (in 1990) there was a chassis roll test every two years, but there was a 15 year "grandfather" limit.

I ran across an article indicating that CA was trying to eliminate the grandfather clause. Did they (buggars)?

If all the equipment is still on the car do they tend to pass without much fiddling?

Pretty sure a 550 will pass with flying colors so long as the cats are there. I believe a car has to be 1976 or older to be exempt. A brand new car doesn't require a smog test for 4 years IIRC - otherwise it is every 2 years for most vehicles. I'm sure it's all up on the DMV website if you need more details.

1975 model year cars and older are exempt.
1976 model year and newer have to get smog tested.
