    That's my plan.
I have this 'romantic thought in my head' that I really want to visit 5 or 6 small
villages when they are having a 'beer fest' or Winter Festival, snow on the ground,
    and drinking with the locals...
This is stereotyped to German and Austrian towns, because I don't know where all
these take place, or when/time frames.

This is why I am trying to investigate train routes, and the stops along the way.
Once I figure those out I can research each possible stop/town and then try
to reserve a room for a night or two, or three...

I learned long ago that I was spending too much time driving or riding in a
charter bus, when I should have been staying put in a city longer.

That sounds epic! Internet is your friend- just research the events within your allowed timeframe and connect all the dots. I find local community Facebook pages are great ways to find small cultural events that are rarely advertised on the internet. And bring a decent camera so you can show us your travels!

Well, I have about 20K worth of Nikon junk, I'm sure I will come up with something usable...
and I've been published in hundreds of newspapers and magazines, albeit 35 years ago.
Is Germany and Austria the best places to find Winterfest stuff? Switzerland worth a damn?

I'm a canon user so agree on your equipments description :p. Unfortunately I don't have any experience with any winter festivals to speak of. The extent of my German travels have been car focussed (Frankfurt motor show, Mercedes Welt, BMW Museum, etc.)

Yeah, travelling entirely by rail is definitely doable in Europe. Millions of people do it every year with Eurail passes. Your route through the Netherlands, Germany, Poland, etc. looks like it would make for an amazing few weeks seeing some beautiful places by train. I recently went to Barcelona and used the 6-day pass for France back in 2022. Just FYI, I hired a guide from https://gowithguide.com/spain In case you need one for any of your tours, you can check them.
