How do you dissasamble the oil pump exactly? It seems a special tool is needed to be inserted into the bolt to be able to hold it in place and unscrew the nut.

I never had the pleasure of disassembling a Ferrari oil pump but it doesn't look any different than any other oil pump. Once the cotter pin has been removed the nut should unscrew off. That being said an impact gun would probably be the best tool for removing the nut. Lacking an impact a piece of wood jammed against the two gears to keep them from rotating would work.

The cotter pin has been removed, and I do have an impact gun, and tried to unscrew it that way but it would just spin and not unscrew.

The book, you referred which i have doesn't mention how. I considered wood but didn't want to brute force my way through it, I thought maybe there is a special tool of some sort, similar to how shock absorbers are unscrewed, for instance on my beamer the shocks have a torx in the bolt which you can hence hold the bolt from and tighten the nut with a wrench

Having taken apart many of these pumps. Two options. Giant pliers and small dia wire, the wire fits into the gear teeth to create a flat. Use the pliers to hold, socket wrench to remove. The other is custom made pliers with teeth that engage the gear to hold.
Never needed an impact gun to remove.

I suppose a belt strap wrench would work as well.

so you wrap the gear with wire and hold it with the pliers?

No, the wire fits into the gear teeth to create flat spots to prevent the gear from turning.
Oil filter strap wrench might be an easier option.

When I do the drop gears I just stick a rag between the gears. Would that be an option in this case?

On my generic engines that's what I do, but in the case of the ferrari I thought there was a special tool. I guess I'll use a rag like always

An air gun has never failed me. A rag is a good choice.
