I do not believe they close down completely, but for sure the level of activity is down to a minimum.

I just returned from Italy last Wednesday. I had called Ferrari of North America a month or two before leaving, and they informed me that the last factory tour before the August shut down, was to be on July 26th. Unfortunately for me, I arrived in Italy on the 27th. The Ferrari museum should still be open, across the street from the factory. There were clearly a lot of brand new Ferrari rolling in and out of the gates when I was there, so they aren't entirely shut down. Ducati, Maserati and Lamborghini all said they were closing for the month of August as well.

Why do the manufacturers all shut down in August particularly?

    All the best,
    Andrew.

it's everything and everyone really....being the hottest month of the year, places started by simply cutting open hours, now it is considered a sort of national holiday for the month, and many people travel / vacation away during this month too
to what extent i can't say these days, but was the case years ago when we travelled near end of july there
