I have a 2012 FF with a leather steering wheel. I can't seem to get an answer from SF Ferrari if I can swap it out for a LED version. Are they prewired, or is it even possible?

    My friend did it.

What made it easy was he found a "used" wheel in black leather, which matched his car interior.

IIRC he paid about $5K for the wheel itself, not sure about dealer labor (replace wheel, connect the wiring, move his airbag module). It works as normal and looks factory. IIRC there is a minor software update to allow LED activation (on/off) which is also a menu-driven item in Car Setup. (you can install an LED wheel as an aftermarket option from Ferrari)

I think brand-new CF wheels are around $7K, but check with your dealer. You may have to hunt to find the right leather color if you don't want black, which seems to be the most popular color, or if you have/want some form of special stitching (color/style)

As for buying a used steering wheel, a bit of caveat emptor, you probably don't want a wheel that was previously in a wreck and had an airbag deployment, but there are usually some listed on eBay, or try Eurospares.
