Food Trivia...Is Prime Rib a Prime Cut of Meat or a Name for a Cut of Meat?

    Got into quite a discussion with a co worker the other day. He said all Prime Rib is graded Prime. I said he was wrong.

    No googling....who do you think is right? And why?

    I think a prime rib is a prime cut of meat. A rib roast, or standing rib roast, is the same cut, but not prime.

    "Prime Rib" is a cut.
    You could have prime Prime Rib. The USDA grade is applied to the entire carcass not specific parts of it.

    Usually too much fat in Prime Rib. I always find myself looking for more when I eat that.

    That's EXACTLY what my co worker said. I'm afraid, like him, you're wrong. Here's a cut and paste from the Iowa Beef Council.

    Q: What is prime rib?

    A: "Prime Rib" is not a specific cut of beef but is actually a preparation method for a Beef Rib Roast. If you know the standard meat roasting method, you can make “Prime Rib” out of several types of Beef Rib Roasts. "Prime" rib does not refer to the grade of beef.

    You both basically said the same thing. Generically saing "Prime rib" does not refer to the grade. A rib roast in a regular gorcery store is generally USDA choice grade. Costco during the holidays does carry USDA Prime grade standing rib roasts though and some stores do as well. The grade is mainly about the marbling. http://meat.tamu.edu/beefgrading/

    there might not be a standard definition, remember a couple months ago they are trying to standardize a set of terms, basically different parts of the country and different producers are using the same name for different things.

    never in my life has any steak house I've been to our beef producing friends & family called any cut of meet Prime Rib that didn't come from the ribs.

    No argument there. They come from the primal cut, but most are not graded Prime. I was talking about the grade of the cut.

    Yep - a rib eye is the same cut of the 109 Standing rib roast - with out the bone.

    Prime Rib is the name given because of the location of cut - generally the first 5-6 ribs of the cow. after that the ribs become smaller and connective tissue - deckles become thicker and less meat.

    Prime Rib is a cut of beef and can be bone-in or boneless. It can be graded at any grade. Most are Choice (typical grocery store ones), but it can also be graded Prime if the quality and marbeling is there. COSTCO typically carries both grades. Price premium is about 50-75% more for the Prime.
