It looks like I may be looking for a moving company for one load in a 50-60 foot truck from N. CA to Texas. I have never had to do this, so I'm seeing what the cost of such a move would be. I also have heard may horror stories about drayage charges, damages, etc. What am I in store for and how many quotes should I get?

I'd get 3-5 quotes if I were you. I think you'll find that the price varies from one mover to another and you increase your chances of saving some money if you cast a wider net. For what it's worth, I've used this company Three Men and A Truck before and I had no complaints. On the affordable side and easy to work with, plus they didn't cause of any of the type of damages you mentioned. I'd just make sure you do some research about a company before agreeing to anything. There are definitely some bad eggs out there in the moving industry.
