Is Giallo Monte Carlo only available for SF90 Spider? Can't we get it for SF90 Stradale?

I will second that, BUT for the right amount of $$$, I think they are getting in the game of doing just about anything you want. I know of a Mexico Blue (Porsche color) used on a F12 TDF and more recently Nardo Grey (Audi Color) used on a 812 GTS, so I think your chances of a color in house to be spec’d on a Coupe rather than a Spider is highly likely.
