Anyone have any experience with this unit?
I am thinking of getting one, the RR. is it worth getting this, or just get the SS.

"RR,SS"?? I have a Gtech Pro and a Gtech Comp sitting in the draw at home. If you pay for the courier you can have the Pro free, if you want the Comp cheap, PM me.
The Pro is usefull for acceleration timing only, the Comp is actually pretty sophisticated and plots power curves, split times, speeds etc etc.
If you are want to be able to use it for circuit work as well, spend about $1500 on a DL1 data logger. www.race-technology.com

Is the Pro easy to install? Try it in Scott's car on Sunday. How does it work, exactly?

see http://www.gtechpro.com/prod.html for RR and SS.
I guess they are the latest incarnations of Pro and Comp.

I actually want to do the HP/Torque curve plots, so I just wanted to know how accurate they are, with people's experience.

I'll bring the comp, plugs in to cigarette lighter.
Cool, just downloaded the "RR" firmware update for my Comp. Scott is welcome to try it in Sunday.

The only issue you need to remeber is that aerodynamics plays a part, as it is measuring hp/Torque by using a calculating based on the rate of acceleration of the car.
In 3rd and 4th gear, you may be doing btween 120-240kmh, so aerodynamics of the vehicle do have a major influence, but they do have great accuracy/repeatability IMO. Ultimately though it isn't much use because of this, to say "my car has x hp".

As always, it's about getting a difference, not absolute, for when you make a change

gtech pro is now like a $20 toy that looks like a shrunken alarm clock. still, they ARE useful, i tuned an extra 30hp or so into my fiat (that's a lot for a fiat  ) a couple years ago in under half an hour with one, it helped me discover that my cams were timed wrong and it really shows what a couple degrees either way can do for your engine.
