Many, many years ago I had abalone in a restaurant in Branson, MO when I was there visiting a friend. I have never found it in a restaurant again since. I'm not flying to CA just to have it. :) Since no restaurant offers it locally I am interested in ordering some:

One pound with shipping is $169.00. My worry is if I do not pan fry it correctly it is money wasted? If you cook it too long it turns into rubber. Should I try?

Searching web pages it seems pan frying is the best way to cook it.

    Any advice?

    Thanks

Turns into rubber very, very easily. Not worth the hassle.

I have had it several times, not very good. Like said before, very rubbery, even when cooked well. Octopus is much better

I catch my own Abalone and prepare it three ways.

    Sashimi style.

Clean the freshly caught Abalone and slice it into small strips. Eat raw, dip in Wasabi sauce.

    Fried

Cut 1/4 thick slices. Soften both sides with a mallet. Use Japanese Shrimp batter and cover the meat. Heat iron skillet with lots of butter and garlic. Fry each side about 45 seconds to one minute. Serve. The Abalone should almost melt in your mouth.

    Ceviche

Use your favorite ceviche recipe, add real crab meat and baby shrimp. Slice the Abalone with a professional slicer to be very thin, 1/8th of an inch.

Either of the three is to die for.

What you are buying is farm raised Abalone. Not so good, IMHO.

Fresh, hand caught Abalone of the NorCal coast is illegal to sell.

This is interesting. The Abalone I had was excellent. South African Rock Lobster is my top favorite and it was better than that. I'm sure it was most likely wild caught? I had it somewhere in the early 80's.
