I have 285/35-18 rears, but quite a few guys run 295/35-18 on the stock 10" rear wheels with no problems.

I've got 275/30/19's with Highlines mounted on my 348SS and they fit fine. I have no idea if 295's would fit but hey sure would fill up the fenders. I think 275's are the right tire.

For the record, I have the 275's also... but I would have gone with 295's if had a CHOICE! Highline doesnt even HAVE the 295's... so you got a BS story. They're pretty famous for stunts like that. The 295's WOULD fit, and provide the exact same overall diameter as the original 348 wheels with the factory recommended tire size. The 275's with the 19" wheels are actually a SMALLER overall diameter than the factory stuff, so I had to have my car lowered to make them NOT look stupid (on MY car anyway)! The 295's would provide a bit softer ride too.

The bill for that was $300... labor only. Ferrari shop, not a dealer.
