    I like a wet scramble with salt and pepper. I got into poached for a little while, and the magic of that teaspoon of vinegar and what it does to the egg is really cool.

    Must be a science guy?!? I too am fascinated by the science behind the vinegar "trick" in egg poaching.

    I make eggs for my wife about 4 or 5 times per week for breakfast. It's a bit of a tricky affair since she likes her yolks thoroughly cooked, but any brown/charred bits on the whites and it's Complaint City! So, I've perfected a technique that I call fry poaching.
    1: Lube up warm pan with butter.
    2: Chuck in eggs before butter starts to brown.
    3: once whites are mostly set, chuck in a half cup of water.
    4: put a slice of American cheese & cover pan.
    5: do something else while waiting for egg to finish cooking on low heat.
    6: use a Matfer Bourgeat spatula (see below) to extract eggs while leaving liquid behind.
    7: clean up.

    Got it down to a system, so it's about 5 mins or so from start to finish, about a minute or so of actual work.

    This is my new favorite egg pan. Not as good as the Mauviel copper, but less of a PITA to clean....T

    You gotta poach them and serve on top of grilled parma ham (crispy yum) with home made hollandaise sauce = best meal of the day

    Poached eggs with a very bad for you sauce on top of smoke salmon on top of toast is my favorite.

    Usually make hard boiled eggs once a week. Bring water to a boil. Throw in eggs for just about 8 minutes. Remove from heat and flush with ice and water. 7-7.5 mins is a nice runny, but not messy yoke.

    Fried, break the yoke, fry till hard, then fry some more to be sure. Tons of rough ground black pepper. Any number of hot sauces to complete them.

    Yeah. Engineer. Good Eats is one of my favorite shows ever.

    Your fry-poaching has a name. It's called a basted egg (steps 1-3), and instead of low heat on 5, you basically let them steam under the cover. I do that too. I can't remember how we found it, but my mrs. says "Have you ever heard of this...?"
