360 I am chasing down cel P0116 and could use some help - Anyone dealt with this?

I am chasing code p0116, which relates to the signal of the coolant temp to the ecu and dash gauge. It indicates that the signal from the coolant temp sensor is outside of normal parameters. I did do a search and could not find much of use. I have ordered the sensor. I don't think it is a thermostat issue as the car warms up properly. Any help, or anyone that has worked through this and can offer advice would be great.

 

thermostat stuck closed will warm up properly no problem, but will overheat the engine. Thermostat stuck open will warm up too, just a little longer when stationary.
thermostat will not throw a code.

I am bettering coolant sensor, instrument cluster wire, coolant sensor wire
