    I've enrolled in the French Culinary Institute (Italian class) http://www.italianculinaryacademy.com/ and just wanted to see if anyone had any dealing with them, good or bad? Any Chef's out there that went there?

    A friend of mine just finished the Academy.....he loved it!!! It seems like he is getting job offers as well. Then again, he as had a few years experience in the business beforehand.

    That great! Do you know what class he did? French, Italian, or... I have no prior experience, this is a total career change.

    I've taken a few classes there and really enjoyed it. Its very expensive for what it is though.

    +1 it is pretty expensive for the class I'm taking..:( but where else do you get to learn how to cook Italian food in Italy for 4 months..:D not to mention doing a "stage" (apprenticeship) for 6 weeks in one of the 20 regions of Italy by yourself at local restaurant..:) Plus they even teach you to speak Italian prior to going there...:D not fluent but enough to work in a local kitchen and speak to others.

    The French Culinary Institute is highly respected, and their restaurant in NYC is excellent. I'm not familiar with their Italian Academy. But if they put the program together, I'm sure it's first class.

    Several years ago, I travelled through Sicily with Alain Sijac, the Dean Emeritis of the French Culinary Institute. He is highly respected around the world, as are others associated with the school. Sounds like a great program and an outstanding opportunity to learn authentic Italian cooking.
