YOU PUT ICE IN A 30 YEAR OLD, CASK ISLAY? As long as you're ruining it, why not add some Bubble Up?

I think you are right. Ice is fine for a 12 year old McClellan, but for 30 yr old Islay!?! Water on the side is the way to go. That said... it is YOUR 30 yr old Islay and of course it is your choice.

I think the general population of scotch drinkers have blended on the rocks and single malt warm... I don't think I've ever seen anyone drink single malt on the rocks, or with club soda or water or anything... But as someone else mentioned, it's PETER'S scotch and he should drink it how he wants...

What is the water on the side for? Is that like taking the cap off a bottle of vermouth 15 feet away from the gin to make a proper martini?

What is so special about spring water or branch(?) water? Is it any more or less tasteless and colorless than good bottled/filtered water?

I normally throw a cube in mine, and mostly do the 12-15 year stuff.

I believe it is a matter of personal preferance--it is your bottle, no?
I always drank the 12 yr. old (blended or single) with 1 or 2 large ice cubes, not letting them melt.
With 30 yr. old, I'd probably drink it straight--no ice, no water on the side. But it would be with a seasoned friend, a really good cigar, a good view, a fine meal, and I'd probably figure on finishing the bottle in one sitting.
The premier benefit of good whiskey is that you still feel reasonably 'normal' the next day.
    Enjoy!

The water on the side is in case you need to "cut" the scotch. Many peatier (sp?) scotches can be a little heavy for some tastes, so, a little distilled or spring water can "open it up" rather nicely. This is especially true with older islay single malts.

There are two reasons I have "water on the side". One is as mentioned, some peatier single malts will benefit from a small addition of water (a few drops to a capful and it should be good spring water). The second is just to drink separately after finishing a glass of single malt, hangovers are a ***** and is mostly due to dehydration :D. But otherwise I like my good single malts as-is.

The reason not to add ice is because it numbs the tongue and reduces some of its sensitivity to the flavors. Also the cooler the temperature of the single malt the less the aromatics come out. In fact a good way to drink single malt is the same as a good cognac, a small portion in a balloon glass, small sips with your nose in the glass and your hands warming the bottom, where the single malt rests, to bring out the aromas.

Of course, you paid for it, drink it how you like.
