Try this for a mop sauce:

    50/50 Worcestershire Sauce/Cider Vinegar.
    1 TSP Thai Pepper Paste.
1/4 Cup Honey or Dried Honey Granules.

How is it to change mops mid smoke?

I guess I could add in the Worcestershire and a shot of Sricacha easy enough...

Not sure I have honey anywhere

    I'd say the no-honey factor drops it down to a .997.... ;)

The jalapenos are known as "Atomic Buffalo Turds". Halved, stuffed with a mixture of cream cheeses and mexican blend cheese and wrapped in bacon then brushed with grape jelly. My guests get violent if I don't serve them.

The lumps of meat are something I created at the last minute. I took the ABT'S and stuffed them in pork sausage, sprinkled the Powerpig Rub on them and smoked. They were a big hit!

I've got some friends that make jalapenos with a finely shredded chicken and cream cheese mixture then wrap in bacon and grill. Fantastic little appetizer. I like to stuff pickled jalapenos with shrimp or my favorite smoked salmon and cheese. I just mix in some shredded cheese, a little mayo, and some cream cheese. Mix it all up and stuff the canned, pickled peppers. They are tasty too but we all know everything is better with bacon on it!! ;)

I had guests show up, so I neglected to snap any pics.

I smoked a 5lb picnic 6.5hrs, mop every 30min. Rubbed with salt, pepper, paprika, onion and garlic powder. That simple mop formula is AWESOME, and I'm not given to superlatives. Perfect balance of spice, sweet, and seasoning. I'd have never thought to use sriracha, but it's just right.

I served with rolls and a side of bourbon based BBQ sauce, but everyone ate it straight, no chaser (me included.)

    Thanks for the recipe!
