I have brand new standard rotors on all 4 corners of my 89 Testarossa.

    I am running 18"512TR rims.
Are there any largers calipers that can be bought that would give more disc coverage without overlapping the edge of the discs.

Is it a bad theory to think that I should start on the rear 1st as it has more weight on it before the transfer to the front in braking, hence I would get better bang for buck?

I don't think that it would be useful for 10% more pad surface =more heat. The rotors are the main issue, reduce the heat and brake efficiency goes up. Bigger rotors all around. My 2 cents
