Leather Dash material shrinking F355 Spider

I have to replace the leather on my '96 F355 Spider dash. Previous owners let her sit out in the sun too much. Does anyone have experience removing their dash? It always helps when you can get a few pointers from someone that has already done the job. I'm also thinking about using mouse hair instead of leather. And, I'm also cleaning off the sticky stuff on most for the plastic panels in my interior. Goof-off or oven cleaner works good just like I read here at FerrariChat.
