Is it possible to disable the mechanicals so that the top can become a pure manual top? Has anyone done this?

If your F355 has not devalued enough in this current market....then by all means, attempt it. ;)

Do it! I was tired of mine doing the spastic Italian ballet of seats moving, windows up/down, top moving, getting stuck halfway, etc. I figure if I am going to have to get out to put the tonneau cover on or take it off the retracted top, I might as well just work the top manually. At least I know it will go all the way up and down this way.

    +1 agreed.
Some time in the future the rare spider with a proper working roof may be sought after. The roof operation is part of what makes the spider, rarther like the 5th valve per cylinder head. Not realy nessesery in hind sight, but was a first for ferrari in the mid 90s never the less.
I have always maintained and serviced my roof system and after 9 years of use has never let me down. How ever i do understand that the average owner will take there cars to the dealership for the tyre presures to be checked because they cant do anything on the cars them selfs;)
All said and done and IMO, if you cant maintain a F355 spider and stay on top of all the work needed to keep it as it was designed to function, maybe its time to think about a 348 with F355 body panels on.
