I would like to take out my engine as I want to polish the rocker/valve covers and do various other things to it, Andrewg on here claimed his fastest time was 3 hours to remove an engine leaving it on the back wheels and taking the body off.
Has anyone done a photo removal of the engine showing where and what has to be removed or disconnected, or can someone please tell me where to start and what the procedure is, any help from mechanics etc... would be a great help ;-)

I recommend that you buy a shop manual and follow the detailed procedures therein. You want to remove the engine just to polish it? It's a lot of work, even though it's easier to do with the Mondial than most. It's not a one day job, if that is what you are thinking. Just getting the bolts on the sub-frame loose can take hours. I wouldn't do this unless I had a MAJOR mechanical failure, which, as you can see, I did.

Pic 1 it looking up at the empty engine bay toward the rear. You can see the radiator expansion tank in the upper right corner for reference.

Pic 2 is looking forward from below. The oil cooling fan (yellow) is in the upper left.

Pic 3 is the right rear wheel well.

Pic 4 is the sub frame assembly with the engine and transmission (split) removed to access the lower cam drive shafts to replace the bearings, which had failed.

Once you have the engine out, it is such a struggle that you are inclined to replace just about everything that can more easily be replaced with such great access, even parts that aren't in need of immediate replacement. I replaced my clutch, for example. The disk had about 25% remaining life, but why not do it while the engine is out? You can literally spend thousands on parts all at one time because it is so easy to do the labor at this time.

Thanks for the pics, I was intending once the engine was out taking a few of weeks to sort everything out, I was going to change the hoses and fit some exhaust wrap, I also have a problematic starter motor which I will have rebuilt
