I need a bit of help. My Mondial T (1991) is a Euro car and according to its manual would be fitted with F119D040 engine, however the engine on the car is F119G040 which according to US manual is fitted to the USA specs cars. The engine is the original, so really don't care why a G040 is fitted to a EU spec cars but here comes my question, D040 engine has slightly different settings in valves clearance and timing settings. Below photos are from the manual showing the different variants. I suppose that since I have a G040 I shall go with it's settings, am I right?

I suspect the different is emissions related. With no cats involved you are likely to have no issues with either setting. Maybe look up camshaft part numbers and see if they are different. You may be able to find the number on your cams and see what you have.

Maybe not. I believe the F documentation shows that the early euro Mondial t (Motronic 2.5, little emission stuff) would be the "D", but that later euro Mondial t (Motronic 2.7, with cats and air injection same as the US) would be the "G". There are two different euro Mondial t OM (early 553/89 and late 737/92) -- what is the print number on the Mondial t OM that you are referencing?. On cars with cats and air injection, they typically increase the exhaust valve clearance a little and fiddle a small amount with the cam timing, as Wade indicated -- i.e., if your car has/had cats and air injection = G.
