Has anyone done this on the F8s? I find that I’m hitting both pedals at the same time. I believe that I read somewhere that the brake pedal can be shifted to the left a bit.

I agree the pedals are too close. I moved the brake pedal to the left on my 488, and plan to do likewise on my recently delivered F8. (I wear a size 10M, so I'm pretty far from a size Sasquatch). Simple to do. Allen head on the front side (I can't recall the Allen head size), and 10mm nut on the back side.

Should I use any thread locker on it.

Sure wouldn’t hurt (blue, NOT red).

If you use a thread locker, like Viper said, use blue. And remember that a dab will do. If there is any thread locker on the little bolts, be sure to clean it off first with a wire brush, and then apply a dab of blue and tighten. I'm not sure of the size of the bolts, but be sure to not go crazy on tightening. Snapping them off, or pulling threads would be a very sad day.

As long as there are no restrictions on the back, hold with the Allen and turn with the nut instead of the other way around. ;)

Just use a bit of normal 242. Even 222 will do.

Yeah, I had to do the same thing on my 488. The pedal kept catching the lip of my shoe because it was too close. I believe I used stainless nylon lock nuts on mine as well.
