Fish and chips at it's genesis isn't great for you. Fried filets and fried potato.

You could do grilled halibut or tuna and baked sweet potato wedges.

If you want the traditional route...see below.

    1 cup all purpose flour
    2 tsp cornstarch
    Pinch salt
    Pinch pepper
    1/2 tsp of baking soda
1 to 1-1/2 can of light or dark beer...depends on your preference in beer. The dark will lend a little bitterness to the flavor.

Add all dry contents together. Add enough beer to make the batter thick enough to emulate loose pancake batter - thinner is better in this application.

Pick a white fish like cod, halibut, striper, etc....something not too oily.
Store fish on a bowl of milk until you are ready to use it.

Bring a sauce pan with enough oil to cover the fish up to about 350 degrees.

Two ways to do this. You can save some of the dry ingredients to dredge the fish before battering, or just drop the fish in the batter. The latter lends for a crispier fish.

Chips- wafer thin slices of potato- skin on, drizzle with a little oil, salt and pepper. Toss in an oven at 425 and agitate once or twice in 40 minutes of cooking. Leave in the oven until they get to the consitancy you want. You can also fry these, but do it before the fish.
