McSorley's on E 7thSt. Best be ready to drink, son.

 

Chumley's is at least temporarily closed.

For beer, Gingerman is hard to beat. Tons on tap and in bottle.
McSorley's is always fun. Light or Dark. My Grandfather used to drink there before they let women in.

Corner bistro on 4th st. in the west village is a good place to start. If in that area also hit Whitehorse tavern where dylan thomas used to hang. Art bar on 8th ave is a decent dive and across town at Pete's tavern on Irving Pl. @ 18th st. is also cool.

 

Sounds like you've already hit up some of the greats. Love Zum Schneider & Gingerman. RIP Chumley's. Here are a couple more of my faves:

Spitzers - Down in the LES, very cool atmosphere and very extensive collection of beers on tap. Highly recommend checking it out
124 Rabbit - If you don't mind a tiny, dirty bar with an unmarked entrance, it has some great Belgiums/Trappists
Loreley - Not an overly impressive beer selection, but some great ones from Germany and a German food menu to go with the beer. They have an outdoor garden that's excellent if it's a nice day/night out, and in a great neighborhood too (used to live 2 blocks away)
Anotheroom - If you've already been to The Room, probably not necessarily worth stopping by Anotheroom. Same sort of place, but smaller and down in Tribeca

And if you don't mind venturing outside of Manhattan, the Bohemian Hall Beer Garden in Astoria is usually packed and well worth the trip.
