When refilling, I started out by adding 8 qts. Then I snuck-up on the final capacity about 1/4 quart at a time until I reached "full" on the dipstick. I used exactly 10qts total. My engine was running and at full operating temp during the top-off.

What’s interesting is that the workshop manual states 13 quarts capacity, implying that a 10 quart refill leaves 4 quarts (30%) of old oil in the system. Is this common in dry sump systems? Does anyone advise a second draining and refill? Given the expense of Ferrari engine work, the cost of a second 10 gallons once or twice per year would be negligible.

I have the same concerns and would certainly like to have drained and refilled all 13 quarts. I did let it drain (both drain plug locations and also both filter mounts) for many hours until there was nothing more coming out. I've read other threads here stating that you will never remove 100% of the old oil, or any other fluid for that matter, since fluid gets trapped in hoses, lines, and radiators...etc. I believe that the oil changes are so frequent and with such comparatively low mileage driven that my engine never really has "old" oil in it. It would be interesting to hear other viewpoints on the topic.
