Oil Over Heating Problem

    Hello, have an '03 360 F1 that I like to track about once a month.

    On hot days (90-95 degrees) after a couple runs (typically 4-8K rpm) the oil temp over heats, gage spikes and red warning light displays. Curious thing is that the oil temp declines rapidly and returns to mid-point (about 240 degrees) within 2 or 3 minutes of slow driving/idling with the engine hood open.

    Water temp stays slightly less than mid point (about 180-190 degrees). All fluids changed two months ago and motor oil has been topped off.

    All fans operating normally. Oil cooler vent clean.

    Current motor oil is Mobil 1 10/60 weight. Previously used Mobil 1 0/40. Oil over heated with both weights.

    Ferrari dealer tech said I should be able to run car on track all day in hot weather and that the problem could be as simple as use of Mobil 1 instead of Shell. Ferrari Tech claimed Mobil 1 and other oils (except Shell) can foam and cause such problems.

    My hand held gage's battery was dead when the car's oil temp gage indicated overheating so I wasn't able to check it at that moment. An hour later, when the car's gage indicated 220 degrees' oil temp, my hand held gage indicate the same temp.

    Could be the sensor but would like to know if anyone has experienced the same sort of problem.
