My 328 GTS shows an oil pressure close to 6 when reved above 3000 rpm but tends to drop below 3 at idle. It is just back from a large maintenance performed at a ferrari dealer. Can anybody kindly confirm to me what should be the normal levels at the varius engine speeds ?

Low pressure READING at idle is possible.
The 328 owner manual lists the correct oil pressure. I believe 6 @ 6000rpm would be correct. Just have the needle on the right half of the scale (not exeeding 9!). You´ll be fine.

You worry needlessly (although I've never seen F put a written spec on the warm idle oil pressure other than to say that "less at idle vs the 6K RPM value is OK"). The crude rule of thumb is 10 psi minimum per 1000 RPM or 0,7 bar per 1000 RPM in your units (the F 6K RPM spec is higher because that's the "normal" spec not the "minimum" spec). Of course, if my warm idle oil pressure was ~0,8 bar, I'd still look into it, but 3 bar at warm idle is plenty -- any more and you're just wasting power pumping a lot of (unnecessary) oil around.
