Not sure if I understand question ..but in general once your engine oil hits 170f or above you can drive as you wish

The 360 motor was clearanced and materials chosen for a 40 weight oil at 100ºC (212ºF) oil. This corresponds to 14 centiStokes.
Oil viscosity change viscosity with temperature. A 10W-40 oil will be about 125 cSt at 40ºF (10X thicker than what the engine wants),
that same oil will be 4.0 cST at 305ºF thinner than desired. At all times the engine wants the oil to be 14 cSt.
Oil viscosity is what keeps metal from making contact with other metal under load at temperature.

I live in Las Vegas and use 10-50 oil. It gets to 115 here, and I have often driven the car (avoiding real traffic if I can) in 105-110 temps.

My oil temp gauge always reads pretty low. I have seldom seen it approach straight up -230 on the gauge I believe.

The radiators are pretty effective on the 360. Much better than the 348 and TR. Moving them to the front bumper helped a great deal. The extra plumbing actually helpes dissipate the heat and bring it away from the block. The fans don't even come on till the needle reaches about 11 o'clock and then will go to about 12 o'clock in stopped traffic when warm. You will hear the fans run and the needle should never really go higher than that. I like to cruise in the city so I see this a fair amount. I used to hear the radiators tin canning in the 348 and I even had a crack I had to deal with. Luckily it was at the top of the core and a little stop leak fixed that. On the 360, I am amazed how much heat the car can take. On the other hand, the under panel makes it harder for the engine bay to ventilate when standing still. The scoops and NACA ducts need movement in order to work the best. I added washers to my rear bumper seams and side under panel seams to give about 1/8 to 1/4 inch gap to draw more air. The wheel wells also help but the headers need movement and convection is restricted by the under panel. The pic above is typical needle position when moving well. And I am talking coolant temps so that's the gauge on the far left.
