As we know from the forum, a new 360 clutch is 8.3 +- 0.3mm and the clutch disk wearing limit is 0.8mm, so it's technically 100% worn at 7.5mm to 7.2mm (8.3 - 0.8 to 8.0 - 0.8). I happen to have my old and new clutch sitting side by side so I took a measure and figured I'd share.

    New clutch - 8.3mm.
    Old clutch - 6.63mm.

Old clutch which wasn't slipping under throttle but did want to inch away if I took my foot off the brake and had the drop to neutral issue. My 1999 F1 360 started dropping to neutral so I took it apart to replace the clutch. One benefit for my 99 is I don't have to reset the PIS since it's auto-set once it goes back in. Pretty easy job so far (shop manual is pretty good).

You have to have the clutch fully out to get the calipers all the way down on the new one to read 8.3mm. If you just measure the first 1/4 inch it gives a lower number around 8mm.

I'm not sure if you can get a reading with the clutch on the car still (probably not), but my F430 needs a new clutch sensor so while I'm down there I'll take the 4 bolt plate off and see if I can get a reading. Once I get the clutch sensor in I'm taking it to get an SD2 reading at the local Ferrari dealer to see what shape the clutch is in.

    Enjoy.
