I recently got my car out of storage after getting back from Iraq and found that it had a 1/4 check engine light on. I pulled the code and it was 1121. I disconected the maf sensors and cleaned them and the light turned of now for the past two days. Before that it would turn off for several minutes at a time, but come right back on. Could it be that easy?

Nope. 1121 is for your crank sensors. Of course, cleaning those connections might solve the issue.

OK. Cleaning the MAF connections *can* sometimes clear up the O2/MAF errors.

I'd suggest a good electrical contact cleaner first, then use Stabilant 22a (nautical "Corrosion Block" from West Marine works well in lieu of those two products, too) on the data connections for the O2 sensors, MAFs, TPS's, crank sensors, and idle regulators.

Kills and prevents *many* common Italian electrical gremlins.

(Also, the above procedure is recommended for your ground strap that goes from tranny to frame in the left rear of your car.)
