Had the Caymus 2019 with some A5 Miyazaki Wagyu. The 2019 is bold in flavor, which for me, over powered the Wagyu. But paired well with the Tomahawk tho. I have another bottle and will let it sit for year or two to see if it mellows.

I’m surprised that a high quality California Cab like Far Niente is past its peak after only ten years...it should be drinking well right about now. Do you think it was an off bottle or, perhaps, not properly stored?

Had an ‘05 Haut Brion magnum last night. Sadly underwhelming even after an hour of air. Too soon?

In this particular case, it was a gift, so I can’t speak for its storage for the first half of its life. I definitely expected more even though it was not a very good vintage for them. It was not corked, but clearly not at its peak compared to others I have had.

I have my still in the cellar…one of the great ones!

I was at Harlan recently, started with a palate cleanser, Krug champagne, then moved to taste the 2019 in the barrel followed by the 2016. Finally when asked what else can they pour me…I asked for a 2008 as I have not opened mine yet…Then they go to the cellar and bought black the 2008!!!! We had 3 tastes…then I asked what are they doing with the rest of the bottle….he said why don’t you take it with you! Yes! Yes! a classy operation!…The 2008 was elegant, balanced, great mid palate..a real long finish! Tannins very subdued with a great fruit but not too fruity…

As my mom always told me, good things come to those who wait. :D

While I don’t have anything comparable to Harlan, I’m trying to be patient with my wines.
